Cagliari, located in south Sardinia, serves as the enchanting capital of this beautiful island. In this culinary experience, hosted by the talented Damiano and his sister, you will delve into the ancient recipe for the delicious culurgiones pasta.
Guided by Damiano, who learned the recipe from his grandma since childhood, you will receive a "scivedda" (container) and be shown the art of preparing the pasta. Afterward, you will prepare the filling and savor all the ingredients. The dough, having rested, will then be skillfully processed, and the distinctive closing of the culurgiones, "a spighedda" (in the shape of an ear), will commence.
Following the preparation, everyone will gather around the table to enjoy appetizers accompanied by a glass of wine while the water is brought to a boil for the main meal. This culinary delight promises to enchant your palate.
The culurgiones recipe hails from Damiano's grandmother, who occasionally prepares these delectable pasta at home with the entire family on Sundays or during holidays. The original culurgiones recipe originates from the Ogliastra province in the south-east of Sardinia, with each county having its own distinctive variation. This lab specifically focuses on the culurgiones recipe from the town of Jerzu.
Led by Damiano and his sister, this class provides a genuine home cooking experience, adhering to standard hygiene rules throughout the process. Guests are required to wash their hands, wear aprons, and, if necessary, use gloves during food preparation. In the rare event of last-minute inconveniences, qualified staff who have participated in this course previously will step in.
